The verdict

The pale gold beer has an enticing aroma of lime marmalade and biscuit malt, interwoven with powerful spicy hop notes. The palate is bittersweet with a good balance of bitter hops and a fruit character reminiscent of lychees, lemons, lime and grapefruit. The finish is dominated by cracker bread grain, tangy fruit and spicy, bitter hops.

Oakham Ales, Green Devil IPA

Production director John Bryan discovered the Citra hop while he was visiting the Yakima Valley area of Washington State in 2009. He was bowled over by the appealing fruit character of the hop – lychees, grapefruit, gooseberry and tropical fruit – and was determined to use it back home. When he was able to get a supply he launched Citra, a pale ale that has become Oakham’s leading beer, and followed it with Green Devil IPA.

The brewery started life in the town of Oakham and moved to Peterborough in 1998, transforming a former employment exchange into the Brewery Tap, the biggest brewpub in Europe. Further expansion led to a move to a bigger plant on the outskirts of the city, but the original kit remains at the Brewery Tap for trial and seasonal brews.

John Bryan describes Green Devil as an ‘American-English hybrid’, with a solid malt backbone balancing the bitter and fruit character of the hops. The beer is brewed with pale malt only and Citra hops are used in both whole flower and pellet form: John adds pellets to the conditioning vessels following fermentation. The beer has around 65 units of bitterness. He has also adopted the German system of kräusening, which means adding some partially fermented sugary wort to the beer to encourage a strong secondary fermentation.
